Program overview

The Gastronomy program (B.A. in Gastronomy and Culinary Arts) is a 4-year full-time undergraduate program delivered by the EMU School of Tourism and Hospitality Management in Famagusta. The program combines theoretical knowledge with practical skills in the art and science of food.

Students study the cultural, historical and scientific aspects of gastronomy while developing the culinary techniques needed to work in professional kitchens. The curriculum is built at the intersection of culinary arts and nutrition science.

Practical experience is a key part of the program: students work in modern kitchens, take part in internships and industry projects, which allows graduates to enter the job market with real skills.

About the faculty

The EMU School of Tourism and Hospitality Management is the leading educational institution of the region in tourism, hospitality and recreation management. The gastronomy program is part of the university's strong tourism and hospitality block.

Gastronomy students enjoy the entire infrastructure of the School of Tourism: teaching and demonstration kitchens, hotel management laboratories, as well as the faculty's connections with hotels, restaurants and tourism companies of Cyprus for internships.

Program structure

The program lasts 4 years and consists of 8 semesters. Instruction is in English (Turkish-language groups are also available). The educational process is built in stages:

  • First year — fundamentals of culinary techniques, introduction to gastronomy and food science
  • Second year — history and culture of gastronomy, international cuisines, menu planning
  • Subsequent semesters — food and beverage management, nutrition and dietetics, specialized culinary modules
  • Internships and industry projects — practice in professional kitchens

The program trains professionals who need both creative culinary skills and business acumen to manage food service establishments.

What you will study

The curriculum covers a wide range of topics in gastronomy and culinary arts:

  • Culinary techniques — hands-on training in food preparation, cooking methods and presentation
  • Food science — chemical and physical properties of ingredients
  • History and culture of gastronomy — the evolution of cuisine and its role in societies
  • Menu planning and design — creating balanced and attractive menus
  • Food and beverage management — operational aspects of food service establishments
  • Nutrition and dietetics — principles of healthy eating and dietary requirements
  • International cuisines — exploring diverse culinary traditions

Students gain practical experience in modern kitchens and have the opportunity to take part in internships and industry projects.

Practical training

Practice is a central element of the gastronomy program. Students refine culinary techniques in the School of Tourism's modern teaching kitchens and apply their knowledge in real conditions during internships.

Students also take part in culinary competitions and industry projects, while international internships in hotels and restaurants allow them to learn professional industry standards and build useful contacts for their future careers.

The EMU School of Tourism provides gastronomy students with a modern teaching base:

Admission

Admission to the Gastronomy (B.A.) program requires a high school diploma or its equivalent. International students must prove English proficiency with standardized tests such as TOEFL or IELTS.

Main documents for application:

  • International passport valid for at least 6 months from the application date
  • High school diploma and transcript
  • Passport-size photos
  • English language certificate (IELTS, TOEFL and similar)
